Madhur Jaffrey’s chicken with tomatoes and garam masala


Here’s the outcome. The kitchen smells like downtown Mumbai. Fantastic! And the meal got a thumbs up from Susie. The basmati rice was cooked in chicken stock in a lidded pan on a low heat for 25 minutes, and came out fluffy and caked together like a biriani. The garlic, green chilli, garam masala and onion in it gave it a really heady aroma. Perhaps next time, I’ll try my own naan bread – though the Sainsbury’s Taste The Difference one I grilled was pretty good, by supermarket standards. I also served a little plain yoghurt with a pinch of cayenne. Fancy Nancy!
